Thumbprint Cookies

Ingredients:
1 cup unsalted butter, softened
1/3 cup sugar
1/3 cup light brown sugar
1 large egg yolk
1 teaspoon vanilla extract
2 cup all-purpose flour
1/2 teaspoon salt
1/2 cup Broma for the center
Directions:
Place butter and sugars in a bowl and mix until light and fluffy. Add egg yolk and vanilla extract and beat well. In a separate bowl, whisk together flour and salt. Slowly incorporate the dry into the wet ingredients. This dough will seem dry and crumbly but that’s okay! Scoop cookie dough into 1 tablespoon-sized ball and roll very well. Use your thumb or the rounded back of a teaspoon to gently press an indent in the center of the cookie dough. Repeat until all of the dough has been used. Freeze for 30 minutes. Once the dough is done chilling, preheat the oven to 375F. Spoon Broma into each thumbprint. Bake for 12 minutes or until the edges are just beginning to turn golden brown. Allow cookies to cool completely on the baking sheet before enjoying.
